Delectable Chocolate Cupcakes

These yummy little cupcakes are so easy to make using our Dessert Block.
This recipe makes 12 and they’re extra delicious with a serving of cream on the side.
- 220g Haigh’s Dessert Block
- 5 eggs
- ¾ cup almond meal
- 1 cup good quality cocoa powder
- 1 cup caster sugar
- 180g unsalted butter
Heat oven to 150 degrees C.
Melt the butter, chocolate and sugar in a saucepan on low heat and allow to cool.
In a mixing bowl combine almond meal, cocoa powder and melted chocolate mixture.
Add lightly beaten eggs one at a time to the bowl.
Fill 12 spot muffin pan with mixture and bake in the oven until the cakes have risen and cracked. The cakes will drop once they come out of the oven.
Serve warm with thick cream and dusting of icing sugar.
